Baking soda, powdered sugar, vanilla, lemons, etc.

Step 1. Gather your stuff. NOTE: If you want a kind of consistency to your bundt that is softer and less dense (more like cake and less like bread), you can try adding cornstarch! For every one cup of all-purpose flour, replace with 2 tablespoons of flour with 2 tablespoons of cornstarch. 

We also recommend aquiring a bundt pan for that lovely donut shape. Cover the inside of the pan with vegetable oil or spray it with non-stick cooking oil. Scatter some flour inside the pan as well.

Before beginning the magic mix for this fabulous cake, pre-heat the oven to a temperature between 325°F  and 350°F.

Step 2. Mix that stuff up. If you haven't prepared your zest yet, get your grater and start. You'll probably need at least four to five lemons in order to grate a sufficient amount of zest for both the cake and the glaze.

In a medium bowl, whisk together flour, baking soda, salt, and a pinch of zest and set it aside.

In a separate, larger bowl, turn the butter and sugar into a cream. The best way to do this is with an electric mixer on a medium speed for 5 minutes. If you're traditional, then beat the mix with a whisk by hand until it is light and fluffy. Add the eggs into the mix one by one, and continue blending it well in between each egg.

In a third bowl, blend the buttermilk, lemon juice, and the remaining zest that was allocated for the cake mix. 

Now begin to alternate pouring a quarter of the buttermilk mixture and the flour mixture into the butter/sugar/eggs bowl. Keep mixing and pouring and mixing and pouring until everthing is finally in one bowl. Keep beating it until everything looks well mixed.

Step 3. BAKE THAT STUFF GOOD. Once the finished batter is in the pan and smoothed evenly, put it in the oven and bake for about an hour, or until a testing stick comes out clean.



Making the Glaze

Step 1. Mix confectioners sugar and melted butter with a spoon or spatula. Add in the vanilla, lemon zest, and lemon juice and stir to whatever consistency you like. If you find the consistency lacking, add in more sure, lemon juice, or a tablespoon of milk. Sugar will make it thicker. Milk thins it out.

Step 2. Continue to beat the mixture until it is thick enough to draw with. You can choose to add food coloring if you wish. We added yellow to give it a sunny look. If the glaze is thin, pour it freely over the cake. If it is thick, you can fill a plastic ziploc bag, cut a corner, and draw freely on the cake with the glaze.
